Pasture-finished bison (Bi_pasture) showed improvements in mitochondrial metabolism, while the pen-finished bison (Bi_pen) show potential impairments in glucose metabolism. This likely indicates that pasture-finished bison are metabolically healthier and display more of an athletic phenotype, which is likely the result of their increased ability to engage in physical activity and/or forage feeding. Dark green colors indicate compounds were higher in grass-fed bison, while red colors indicate compounds were higher in pen-finished bison. Yellow numbers indicate a significant difference (P < 0.05); blue number and light green/red coloring indicates a trend for differences (P < 0.10)
